FLO’S CARROT CAKE

120ml Oil
150gr Brown Sugar
3 Eggs
3ml Bicarb
4ml mixed spice
5ml Vanilla Essence
140gr Self Raising Flour
5ml cinnamon
pinch Nutmeg
100ml mixed fruit
2 cups grated carrot

Beat oil sugar and eggs well, add bicarb and vanilla essence mix well. sift dry ingredients and beat into muixture, add dried fruit and carrots and mix well.
Microwave for 10 mins. on 100% let cool before turning out
