Low Fat Cooking Spray
Teaspoon Yeast
375g strong white bread flour
1/2 teaspoon salt
225ml hand-hot water
25mg vitamin c tablet crushed
Skimmed milk for brushing
Spray a 480g loaf tin with low fat cooking spray. Blend the yeast with 75ml of the water and add the vitamin C tablet. Stir the yeast mixture into the flour and salt, adding enough water to make a firm dough. Kneed for 10 minutes until smooth and elastic. Put it into the loaf tin, brush with milk and leave to rise in a warm place for 45 minutes. Preheat the oven to 230C / 450F / Gas Mark 8. Part Bake the bread for 25 to 30 minutes. When cooked, the bread should sound hollow when the base is tapped.
